I sometimes see this listed as an extra, but I have no idea what it is.

On french Crying freeman it included film of practices of the fight scenes and rehersals of some scenes and was a great extra.
It's actually behind-the-scenes footage - stuff that didn't get used in the Electronic Press Kit (EPK), which is sent out to all TV stations and features clips from the film, trailers, interviews and behind-the-scenes footage used on crap like The Movie Chart Show.
There's an example of one on the 2-disc set of Se7en.
