Is there an add on processor like the Yamaha DSP E800 but caters for 6.1 and PLII????

The only ones at the moment are the top of the range ones from the likes of Lexicon, TagMaclaren & Meridian.
You can use an ordinary AV amp as a processor, you just use the tape loops, the same as you would with a processor.

Denon 3802 gets good reviews
Perhaps the most affordable one is the Marantz SR5200 (c£350) - has a pretty good rep for the money.

As an aside, does the DVD player need any special attributes to handle PLII/6.1 or is all the trickery in the decoding of the amp/receiver??

Nope - no fancy DVD player needed at all.
DPL2 is simply an improved version of Prologic - it was always designed to work with existing ProLogic encoded material, such as prerecorded VHS tapes and broadcast TV. In other words, DPL2 is simply turbo prologic - no special software or player is needed.
For 6.1, the extra track is encoded on the disc (either discretely as in the case of DTS-ES Discrete, or encoded prologic style into the rear left and right channels (DTS-ES Matrix, THX-EX (DD-EX) or the many proprietary versions)). The player simply outputs the bitstream to the amp, where the decoder does everything necessary.
