Because in America each show gets roughly 22 episodes per season. There are more weeks in a TV season than 22, so episodes aren't on every week in 99% of cases. Sometimes shows will go months without new episodes. It's been like this for years, although some networks are changing this (ie. Fox with 24).
PLus, they are only 3 or 4 eps ahead on filming, so have got to take breaks to let the filming get ahead, because they're too darn impatient to let filming run ahead enough to do it in one straight run...

I guess it's the same reason Supernatural, House, Criminal Minds, The Office and Prison Break all get put on hold. It's strange though, because other popular shows like The Shield, CSI and 24 never seem to be affected.
It's very annoying to be honest and interupts the flow of the show. You can see why people wait for the DVD's these days. Perhaps thats the idea?
There have been loads of breaks in CSI this year!
As for 24, their ability to do a straight run through all the episodes is facilitated by the late start in January, as opposed to October like everything else.
Has something to do with "sweeps" too IIRC, but I'm not sure what they are...

Sweeps are when Networks decide thier advertising rates based on viewing figures. That's why sweeps week shows tend to have big must see episodes to try and massage the numbers.
It drives me insane, nothing more annoying than settling down to a show to find it was an episode from 3 weeks ago !
I have completly lost interest in Desperate Housewives because of this(doesnt help that this season hasnt been very good either!)

They're done in November, Feb, May and July. Since US Summer TV is a bit of a graveyard, nobody really tries in July. But they try to hit the other three months instead. So you get a series starting to September to grab people, big events in Nov, Feb to try and keep them and then big blow out finales in May.

thanks for that mate, i always wondered how it worked, so diffirent over here, but i guess it's big bucks with such large viewing numbers.

It's crazy that Lost started on September 23rd and is only 15 episodes in, whereas 24 started in January and is already upto episode 13 (come tommorow)

What i meant was that there are at least one other recent thread where this subject has been discussed in some detail. No offence meant. :)
In sweeps weeks the ratings bodies monitor about ten times the number of households than in normal weeks, hence the advertisers place a lot more stock in the viewing figures for those weeks. In turn the networks do whatever they can to ensure people watch in that week.
