Brief guide :

Analogue 6 channel : This relates to DVD players that have on board decoders (DD or DTS or both, eg Wharfedale M5) - the player takes the digital soundtrack signal from the disc, converts it to an anlogue signal and then sends it out via 6 phono connections to a matching amplifier, which then distributes the sound around the various speakers : front left & right, centre, rear left and right, subwoofer
Stereo PCM : PCM stands for Pulse Code Modulation - a posh terminology relating to the way a digital audio signal extracted from a CD, for instance, is bounced along a digital cable, such as as optical or coaxial digital connectors, to an amplifier : it will only ever be 2-channel though, so is not as good as say a 6 channel bitstream signal
Analogue 2 channel : basic meat and potatoes stereo audio signal, converted from a digital source (eg CD or DVD) and output via analogue phono-phono connections to an amplifier : pretty much the same as PCM, except it is purely analogue, as opposed to digital
Bitstream : The mutt's nuts : pure digital audio stream sucked from the DVD by the player and bounced along either a fibreoptic cable or a special coaxial connector to an amplifier capable of decoding the 0s and 1s into a meaningful 5.1 surround sound sensation

Hope this helps :D
