I can only help you out with a couple of those:
The Phantom menace: All regions are identical in terms of extras. However in one of the featurettes, Rick mcallum says the F-word, which has been blanked out on the R2 version. If you prefer Pal over NTSC, go with the R4 as you should get it a lot cheaper thanks to the weak Australian dollar.
Stargate I guess the French version is the best, as it's a 2 discer, which contains the Theatrical & The Director's Cut. It also has more extras than the U.K, (which just has the Director's cut & commentary) although it's more expensive.
Stargate The French version seems to have more extras but according to Amazon.fr the format is only 1.33:1
The German and UK versions are apparently identical. Not so many extras but 2.35:1 Anamorphic.

Amazon.fr as usual have their technical specs wrong.
The two disk set with a longer director's cut is coming to france on Dec 4th. It is anamorphic 2.35:1.

Pearl Harbour isn't worth your money on any region - get the R2 rental for a night.
Save the Last Dancecomparison (http://www.dvdcompare.org.uk), they seem the same unless you need loads of different subtitles
